I was craving the Fudgy Cookie Bars that I shared a month or so ago. I thought I had all the ingredients but quickly realized (after I started) that I did not. So I did a little improv with what I had on hand and thus the Pantry Cookie Bars were born.I asked my mom how much you have to change a recipe to make it your own and here's what she replied...
I didn't have paprika, So I used another spice.Fortunately my improv turned out nicely. So without further ado, here's the improvised recipe!
I didn't have potatoes, So instead I used rice.
It called for just a half can of tomato paste...
I used a whole can because I hate to waste.
A friend gave me this recipe, she said it can't be beat...
But the dish was so bad, that it wasn't fit to eat!
Pantry Cookie Bars
1 3/4 cups all-purpose flour
3/4 cup powdered sugar
1 cup cold butter, cut into pieces
1 (14-oz.) can sweetened condensed milk
1 teaspoon vanilla extract
1 1/2 cup mini chocolate chips, divided
1/2 cup flaked coconut
1/2 cup chopped pecans
Preparation
1. Combine first 2 ingredients in a large bowl; cut in cold butter pieces with a pastry blender or 2 forks until crumbly. Press mixture onto bottom of a 13- x 9-inch pan.
2. Bake at 350° for 15 minutes. Remove pan, and place on a wire rack.
3. Melt together condensed milk, vanilla, and 1 cup mini chocolate morsels in microwave, stirring every minute until smooth. Pour mixture evenly over prepared crust, spreading to edges of the pan. Sprinkle with coconut, chopped pecans, and remaining chocolate morsels.
4. Bake at 350° for 20 minutes. Cool in pan on a wire rack 1 hour or until completely cool.
Note: Store bars in airtight containers up to 1 week. You may also freeze bars up to 1 month. Um, ours did not last that long!

They look great.
I improvise often. I love being able to go to Google and find subsitutes for ingredients I don't have. I especially liked learning that I can use milk and vinegar to replace buttermilk.
Oh heavens. They look wonderful! Now I'm wondering how many of the ingredients I have in my pantry...hmmm...

My mom makes a similar bar... we call them her "travel bars" because she made them for our car trips when we were little! They are delicious when they've been sitting in a semi-warm car all day... all ooey and gooey :)
First, I love this recipe and I can't wait to try them. Second, I made turtle cake from ingredients in the pantry. I just whipped up my own recipe! My mom always says that those are the best kind!

LOL! My mom was the queen of improv, so I thought. When I thought there was nothing to eat, she would whip up something out of nothing. :D I've learned a lot of it from her! :D
